Sunday Yum


Something a little different from me today! I wanted to share a recipe for easy lemon curd, because I never cook anything and, inspired by the Great British Bake Off, I have decided that this Autumn I am going to try and improve my cookery skills. I'm sure I say this every year but I actually did some cooking today and it turned out reasonably well; i.e the kitchen is still standing. With this in mind, if I can do it, anyone can! Here's the recipe with my annotations, I hope you enjoy it if you do decide to make it too. 

You will need: 
3 eggs
3 lemons
125g butter
225g caster sugar

Zest and juice the lemons, and combine them with the sugar and the butter in a heatproof bowl
Place the bowl over a saucepan of simmering water (don't let the bowl touch the water)
Stir all the ingredients together until all the butter and sugar has melted, then remove from the heat. Next time I will cube the butter up smaller to help it to melt more quickly.

Beat the eggs and add to the mixture, then put the bowl back on the heat. Stir together until the mixture thickens and becomes the classic opaque yellow of lemon curd. This takes a little while because you mustn't adjust the heat, or the eggs will start to cook. It probably took about 15 minutes of stirring before the mixture got the the correct consistency.

Remove from the heat once the correct consistency has been reached and transfer to a screw top jar (or two!) I used food jars which I washed up and saved. You can buy prettier ones from homemaking stores but these are a cheap and easy alternative.

Lemon curd can be spread on bread or toast or used as a filling or topping for hundreds of different desserts.  You can buy it ready made for a few pounds but this only cost pence to make as all I had to buy were the lemons; everything else I already had at home as it uses mainly store cupboard ingredients.
