Pancake Day Twist


With pancake day rapidly approaching, I thought I'd share with you the simplest pancake day recipe EVER! It literally takes just two ingredients and is really easy, tasty, and healthy too (as long as you go a bit easier on the sugar than I did!) Thanks to Cassey Ho for this recipe, it's become one of my favourites!

All you will need is ONE banana and ONE egg. 

Thats it! Even I can make this, and I'm not a great cook!


1. Peel and mash the banana
2. Crack the egg into the bowl
3. Combine
4. Pour the batter into a jug to make measuring out easier
5. Coat the pan with oil 
6. Pour in a small amount (you can make one large pancake but these aren't as pliable as regular pancakes so I find smaller ones easier to manoever, stack them up American style!)
7. Flip and Serve! I chose sugar and blueberries but you can add lemon curd, strawberries, plain yogurt, chocolate spread....anything you fancy!

There you have it! Delicious, easy, and perfect for pancake day!

I love banana pancakes, I make them for my boyfriend on pancake saturday! Sometimes I put chocolate drops in them too! So yummy!
